A new pizza restaurant – Rudy’s Pizza Brighton – is due to open its doors at the former Chilli Pickle site in Jubilee Street in the North Laine in Spring The Manchester brand began in Manchester where it is known for its authentic Neapolitan pizzas.
Since launching in 2015, Rudy’s has grown to 31 locations across the UK. With minimalist, industrial-style decor and a focus on traditional pizza-making methods, owners say the Brighton branch will continue the brand’s commitment to quality. Each pizza will be made with dough fermented for 24 hours, cooked in a Stefano Ferrara oven for just 60 seconds, and topped with premium ingredients from Naples, including San Marzano tomatoes and Fior di Latte mozzarella.

Rudy’s Pizza Brighton will also be recruiting for around 30 roles, with a focus on experienced pizzaiolos and managers. The company recently launched its Pizzaiolo Academy to provide hands-on training in authentic Neapolitan techniques.


Diners can expect classic options like the Marinara, Margherita, and Calabrese, alongside rotating specials, Italian desserts, and a curated drinks menu featuring Italian spritzes, local lagers, and classic cocktails.
