The Story of Bonsai Plant Kitchen
Bonsai Plant Kitchen made its humble beginning as a takeaway out of a cafe in the lockdown period of 2021. When life began to look a little more normal again, they took their food to Presuming Ed’s pub as a pop-up eatery, but this wasn’t their end goal.
2022 was the year they found a more permanent home for their culinary creations, and they seized the opportunity to open their own restaurant on Baker Street in the heart of the city.
Although their menu is solely vegan and aspires to create delicious food for this demographic, the dishes were curated for meat-eaters to enjoy too. Co-founder and director, Chef Dom utilises his travelling experiences in cities like Tokyo and the food markets of Bangkok to bring authentic Asian dining to Brighton. To really capture the genuine flavours of Vietnam, he uses his wealth of knowledge from the cooks of Hoi An.
The Food
Bonsai Plant Kitchen in Brighton offers a whole host of dishes, whether it be snacks, small plates, sliders, or tempura and grill dishes for a larger appetite.
Start off your dining experience with some house-made kimchi or sweet and spicy edamame. How about ordering a selection of delectable small plates such as mixed vegetable gyoza, Hanoi ‘pork’ spring roll, and crispy kale leaves with sticky soy and ginger?
For some traditional Japanese cooking methods, try the bincho skewers, which are cooked over binchotan coals. Choose from ‘chicken’, Mongolian ‘lamb’, and Japanese sweet potato.
Stop by on Friday for a bincho lunch set between 12-2 pm for £15 every week!
